The processing of honey often removes many of the phytonutrients found in raw honey as it exists in the hive. Raw honey, for example, contains small amounts of the same resins found in propolis. Propolis, sometimes called “bee glue,” is actually a complex mixture of resins and other substances that honeybees use to seal the hive and make it safe from bacteria and other micro-organisms. Honeybees make propolis by combining plant resins with their own secretions.
The resins found in propolis only represent a small part of the phytonutrients found in propolis and honey. Other phytonutrients found both in honey and propolis have been shown to possess powerful antimutagenic properties. These substances include caffeic acid methyl caffeate, phenylethyl caffeate, and phenylethyl dimethyl caffeate. Researchers have discovered that these substances may reduce cellular mutations in the colon of animals by shutting down the activity of two enzymes, phosphatidylinositol-specific phospholipase C and lipoxygenase. When raw honey is extensively processed and heated, the benefits of these phytonutrients are largely eliminated.
One major cause of allergies is airborne pollen from trees, flowers and grass growing. This is the same pollen that bees collects on their hind legs by going from flower to flower. In much the same manner as allergy shots build up resistance to an allergen, immunotherapy with honey can be beneficial in fighting allergies. By taking a small amount of local honey (which contains traces of pollen) over a period of time, a person can build up a resistance to the pollen. It has been also been found that drinking four tablespoons of honey mixed into a 16-ounce glass of water improved the antioxidant levels in a person's blood which helps support a healthy immune system.
