Mesquite contains rich quantities of calcium, magnesium,
potassium, iron and zinc, and is an excellent source of the amino acid lysine as well. To
produce this healthy whole food powder, ripe Mesquite pods are hand-picked,
rinsed thoroughly, and naturally shade dried. A special grinder is used to crush
and pulverize both the pod and the seeds of the mesquite into an ultra-fine
flour.
In
addition to its great taste, Mesquite Powder is high
in dietary fiber and protein (about 17% by weight). The soluble fiber, galactomannin gum, in
the seeds and pods of mesquite slow absorption of nutrients, resulting in a
flattened blood sugar curve. The gel-forming fiber allows foods to be slowly

flour, corn meal and other commonly cooked staples which are much more rapidly
