[Recipe] Shiitake and Maitake Mushroom Sauce

This fabulous mushroom sauce represents an incredible serving of shiitake and maitake mushroom -- which are both incredibly delicious. This fantastic recipe features a traditional mushroom gravy without the flour.  The secret to the tasty creaminess comes from our whole mushroom powders.

This recipe is so easy, it just takes:

  1. Whisking the ingredients together and then
  2. Stirring it occasionally on medium-low heat for about 20 minutes

[Recipe] Shiitake and Maitake Mushroom SauceMushroom Sauce Ingredients:

  1. ½ cup Maitake Powder
  2. ½ cup Shiitake Powder
  3. 1 tbsp garlic powder
  4. 2 tsp onion powder
  5. 2 cups of Broth
  6. ¾ cup of water
  7. 2 oz of white wine
  8. 1 tsp vinegar
  9. 1 Bay leaf
  10. 3 tbsp cashew cream or grass-fed cream
  11. 1 tbsp of grass-fed butter (optional)
  12. 2 tbsp olive oil for the sauteed fresh mushrooms
  13. 1 ½  tsp cinnamon
  14. Salt and pepper
  15. Sauteed mushrooms

Directions:

  • Whisk all the ingredients together in a saucepan until blended.
  • Add the sauteed mushrooms and  bring to a gentle boil on med heat
  • Simmer gently for 20 minutes.
  • Remove from the heat.

Personally, I like finishing this sauce with a “monter au beurre”. Basically that means you stir in 1 tbsp of grass-fed butter after the sauce has finished cooking. This adds a glossy, velvety texture which adds flavor, beauty and umami! The fat helps emulsify and bring the flavors together.

This can be served on anything that suits your fancy!

Yield: approximately 3 cups
