Who doesn’t love a warm, buttery holiday pastry?
A delicious childhood classic - we added our own tasty spin for you to enjoy. This recipe uses our Honey for sweetness. But the real star of this recipe is our Organic Freeze Dried Super 8 Berry Blend.
Our berry blend, filled with healthy vitamins and minerals, combines acerola cherries, goji berries, acai berries, maqui berries, blueberries, blackberries, strawberries, and red raspberries.
It's easy to see why this super simple jam is the star of these delicious holiday treats. Not only does it taste fantastic, but it's also a fun way to enjoy antioxidants, Vitamin C, potassium, and iron in one festive delight!
These dark berry pastries are sure to impress for holiday parties or even year round. And it’s a great recipe to involve the kids. Kids will have fun using cookie cutters to create holiday shapes and decorate them with sprinkles or top with their favorite healthy fruit powders.
Ingredients:
- 2 cups All Purpose Flour
- 1 cup (2 sticks) Cold Butter - Sliced
- 4-5 tbsp. Cold Water for Dough
- ½ cup Organic Freeze Dried Super 8 Berry Blend
- ½ cup Honey
- 6-7 tbsp. Water for Berry Jam
- 1 tsp. Vinegar
- 1 tbsp. Whole Milk Powder, Cashew Milk Powder or Butter to brush on top
- Organic Coconut Palm Sugar for sprinkling on top
- Strawberry Powder for Decorating
- Matcha Green Tea Latte Powder for Decorating
Directions:
- Preheat the oven to 375F.
- For the dough:
- Add all-purpose flour, butter, and vinegar in the food processor, add cold water slowly while pulsing until it becomes a dough.
- On a floured surface, cut the dough in half and flatten into two discs (make sure not to work the dough too much as this will make the pastries tough instead of flaky and soft). Wrap the discs in plastic wrap and refrigerate for ½ an hour.
- While the dough is chilling, prepare the berry jam.
- The berry jam can be made on the stove or in the microwave.
- To make in the microwave, combine the Organic Freeze Dried Super 8 Berry Blend, Honey, and water in a glass bowl, and mix well. Microwave this mixture for 30 seconds at a time, making sure to mix well, add more water if needed to reach desired jam consistency.
- To make the jam on the stove, combine the Organic Freeze Dried Super 8 Berry Blend, Honey, and water in a small saucepan, stir the mixture over medium heat until it becomes a thick jam.
- Afterwards, remove the dough from the plastic wrap and roll it out using a rolling pin onto a floured surface. Roll into a rectangle shape about ⅛ inch thick, from this, cut the dough into small rectangles or different shapes (make sure to cut two of each).
- To assemble the tarts, Place about 1 tsp. of the filling onto one side of the dough and leave a ¼ inch border to seal the edges so that the two sides of dough stick together. Afterwards, crimp the sides lightly with a fork.
- Prick the top of each tart multiple times with a fork to allow steam to escape the tarts. Brush the top of the pastries with milk or butter of your choice in order for the pastries to evenly brown. Sprinkle the tops with Organic Coconut Palm Sugar or any sugar of choice and bake for 15-20 minutes or until golden brown.
- Remove the tarts from the oven and allow them to cool at room temperature for a few minutes. Top with desired powders or sprinkles for decoration. We used Strawberry Powder and Matcha Green Tea Latte Powder for decoration.
