Mother’s Day Recipe: Delicious vegan protein waffles with almond milk and oat flour

With mother’s day coming up, it’s a great time to treat mom to a special breakfast. Not only do these waffles taste delicious, but they are also a great balanced treat that includes protein, fiber, and healthy fats. 

These protein waffles are delicious; slightly crunchy on the outside, but light and fluffy on the inside. You'll never believe how healthy they are and they’ll quickly become a family favorite. This recipe calls for gluten-free flour but feel free to modify and add your own flour of choice!

We used a food processor to turn our raw organic almonds and organic rolled oats into fresh flours.  This kept the flavor of both the almonds and oats fresh. We also made our own almond milk which only requires our raw organic almonds and water!

The key ingredient in this recipe is our Organic Vanilla Vegan Protein powder which is high in protein, is already sweetened with natural stevia and has a delicious vanilla flavor, so there is no need to add any sweetness or flavor to the recipe. However, if you want to add some more sweetness, add some of our raw, pure, premium honey to the batter for the perfect touch of sweetness.

Ingredients:

  1. 2 cups raw organic almonds to make almond milk (soak overnight)
  2. 4 cups water to make almond milk
  3. 1 cup organic rolled oat flour
  4. ¾ cup raw organic almond flour
  5. ½ cup organic Vanilla Cream Vegan Protein powder
  6. 2 tbsp. organic green banana powder
  7. ¼ cup organic bittersweet chocolate chips
  8. ¼ cup organic freeze dried Super 8 Berry Blend (or freeze dried strawberry powder)
  9. 4 to 5 organic cacao butter wafers
  10. ½ tbsp. baking powder
  11. 3 tsp. apple cider vinegar 
  12. Raw, pure, premium honey for topping
  13. Extra fine gourmet himalayan salt -  to taste 

 

Mothers Day Vegan Protein Waffles

Directions:

  1. In a food processor or blender, add about 1 ½ cups of rolled oats and process until it becomes a fine powder. Repeat this process with 1 ½ cup almonds to make the almond flour. 
  2. In the same blender, add the almonds that were soaked overnight along with the water to make almond milk and blend until smooth. Strain with a cheesecloth and set almond milk aside. 
  3. In a large bowl, whisk all dry ingredients: oat flour, almond flour, Vanilla Vegan Protein Powder, green banana powder, salt and baking powder.
  4. To this mixture add the almond milk slowly, the batter should not be clumpy but not too runny either (we used around 2 ½ cup milk).  
  5. Add vinegar and stir well (If the batter is too thick add more milk, and if it’s too runny add a few tablespoons of flour).
  6. Preheat your waffle iron and spray cooking oil on both sides, measure about ½ cup batter (use more or less depending on the size of your waffle maker, the batter should evenly cover the waffle iron). Pour batter into the center of the hot waffle iron, spread the mixture if needed, then close the waffle maker and cook until light brown (about 4 minutes).
  7. Remove the waffle when ready and spray more oil to the iron between batches, if needed. 
  8. This recipe yields 6 small waffles, adjust quantities if needed.

For topping: 

  1. Add bittersweet chocolate chips to a microwave safe bowl, microwave for 30 seconds at a time until completely melted. 
  2. To this bowl add 4 to 5 cacao butter wafers (or vegan butter), stir well and microwave 30 seconds more to thin out the chocolate sauce.
  3. To make berry sauce, in a separate bowl add the Super 8 Berry Blend (or strawberry powder) and add about 1-2 tablespoons of water, whisk well until you have a sauce that is not clumpy but slightly runny.
  4. Serve the waffles warm and top with your favorite fruits, chocolate sauce, strawberry sauce, and honey or maple syrup.
  5. Enjoy!!
