[Recipe] Z Natural Foods’ Earth Day Salad

Springtime brings many delicious and in-season fruits and vegetables. And there's no better time to celebrate Earth Day!

That’s because Earth Day is a great way to celebrate nature's colors, textures and flavors in a big, delicious salad. 

To give you a little inspiration for your own Earth Day celebration, here is an easy recipe we like to simply call Z Natural Foods’ Earth Day Salad. But we invite you to give it your own special touch and truly make it your own

In this green, zesty and vibrant salad we use cucumbers, radishes, beets, bell peppers and carrots -- but feel free to also add your favorite seasonal local veggies.

This recipe is fun to make with the kids. They can help make shapes with the vegetables and it’ll get them excited to eat their creations (with a little help from Mother Nature). This salad recipe is nutritious and delicious as we added nuts and seeds for extra protein and crunch, and you could also add your favorite dressing to really make it your own.

Here’s what you need and how to make your own Earth Day Salad.

Ingredients:

  1. Organic pumpkin seed kernels
  2. Organic hulled sesame seeds
  3. Organic hulled hemp seeds
  4. Organic whole raw almonds
  5. Organic whole, raw cashews
  6. Gourmet Himalayan salt (fine grain) - to taste
  7. Organic black pepper powder - to taste
  8. Salad of your choice (we use beet, carrot, tomato, red radish, celery, sweet bell peppers, lettuce, and cucumber)
  9. Dressing of choice

Directions:

  1. To make the big tree in the salad, use sliced fresh cucumber for the tree top, sliced carrot, a celery stick for the trunk and almonds as shown in the picture.
  2. For the small tree slice the red radish then cut in half, use a celery stick for the trunk and add almonds to the center. For the second small tree, slice small baby carrots to form into a circle and use a celery stick for the trunk. (*Note: Try to cut the vegetables to the same thickness.)
  3. For more decoration use almonds and pumpkin seeds.
  4. Chop more vegetables of choice (we used carrot, red radish, cucumber, beetroot, tomato, sweet red pepper) and place on lettuce leaves as pictured.
  5. Garnish with sesame seeds, hemp seeds, cashew, almonds, salt, pepper, and dressing of choice.
